Cataplana de Lulas
É oficial! Inaugurei a minha nova panela de Cataplana! Fiquei radiante com o resultado. Esta cataplana não é essencial mas trouxe com certeza mais alegria à minha vida e à minha cozinha!
Lulas 500 gr
Bacon 100 gr
Cebola Picada 1
Alho picado 4 dentes
Pimentos às tiras 1/2
Louro 2 folhas
Salsa 1 ramo inteiro e outro para picar
Vinho Branco qb
Tomate pelado ou Tomate Fresco qb
Ketchup ou açúcar (para cortar ácido do tomate se necessário) qb
Sal e Pimenta Preta qb
Limão qb
Batatas Novas às rodelas grossas qb
Usei um saco de lulas congeladas; atenção que depois de descongeladas reduzem bastante o volume e depois de cozinhadas nem se fala! É um "bicho" que rende pouco, mas que é delicioso!
Por as lulas a descongelar num passador para irem escorrendo. Depois lavar em várias águas e limpa-las bem por dentro, retirando os tentáculos que tb se usam. Por vezes sai um cheiro intenso e desagradável, mas com a lavagem isso desaparece.
Tempera-las depois com sal, pimenta preta moída e sumo de limão e reservar. Na Cataplana deitar o bacon às tiras e deixar fritar bem (até ficar crocante); deitar então um fio de azeite e a cebola juntamente com o alho para refogarem ligeiramente; adicionamos agora os pimentos que tb deixamos refogar um pouco; refrescar com vinho branco e adicionar as folhas de louro e o ramo de salsa bem atado; entra agora o tomate (usei pelado, 1/2 lata) e temperamos tudo com um pouco de sal e pimenta deixando apurar ligeiramente (se estiver ácido podemos adicionar um pouco de açúcar ou ketchup). Adicionar então as lulas cortadas ao meio e as batatas por cima , salpicar um pouco de sal grosso e fechar e deixando cozinhar cerca de 30 minutos sem nunca abrir a Cataplana. Quando se abrir polvilha-se com salsa picada e serve-se de imediato! Hummmmmmmmmm...estava mesmo boa!
E vou aproveitar todo o caldo/molho que sobrou para fazer uma sopa! Aguardem.....
